    Ingredients

    • 6 Cloves Garlic Organic, Minced
    • 3 Handfulls Fresh Thyme Organic
    • 4 Tbs Atlas Olive Oil Organic
    • 2 Tbs Red Pepper and Chili Oil Organic
    • 3 Tbsp Sun Dried Tomatoes Organic, Chopped
    • 4 Tbsp Tomato Paste Organic
    • 1 16oz Glass Jar Tomato Purée Organic
    • 1/3 Cup Reserved Pasta Water Filtered
    • 1 Tbsp Butter Organic, Grass Fed
    • 1/3 Cup Heavy Cream Organic
    • 1 Tsp Italian Seasoning Simply Organic
    • 2 Tsp Himalayan Salt Organic
    • 2 Tsp Fresh Cracked Black Pepper Organic
    • 8 Oz Rigatoni Organic

    Topping:

    • 4 Leaves Fresh Basil Organic
    • 2 Tbsp Atlas Olive Oil Organic
    • 1/4 Cup Freshly Grated Parmesan Organic

    Instructions

    • Boil the Pasta:
      Bring a large pot of salted water to a boil. Cook your pasta until al dente. Before draining, reserve 1/3 cup of pasta water. Set Aside.
    • Infuse the Oil:
      In a large skillet over low heat, warm the olive oil for 10 minutes. (This slow heat releases the best flavor without burning the garlic)
    • Aromatics In:
      Add smashed garlic and fresh thyme to the warm oil. Let it sizzle gently, stirring occasionally for about 3-4 minutes or until garlic is golden and fragrant.
    • Build the Sauce Base:
      Stir in sun-dried tomatoes, red pepper & chili oil, and tomato paste. Cook on medium-low heat for 2-3 minutes, letting everything roast together and deepen in flavor.
    • Add Tomato Purée & Pasta Water:
      Pour in the organic tomato purée and stir until smooth. Mix in the reserved pasta water to help the sauce cling to the noodles.
    • Cream It Up:
      Turn the heat to low. Stir in butter until melted, then add heavy cream. Season with Italian seasoning, salt, and pepper to taste.
    • Add Pasta:
      Toss the cooked pasta directly into the sauce. Stir well until coated and glossy.
    • Plate & Finish:
      Serve in shallow bowls or on a pasta plate. Top each serving with a drizzle of olive oil, torn basil, and fresh parmesan.

    Optional Add-Ons:

    • Add grilled chicken, shrimp, meatballs, or roasted mushrooms for extra protein.
