    Smash Burger Patties

    Ingredients

    • 3 lbs Organic Grass-Fed Beef I prefer pasture raised or grass-finished
    • 2 ea Organic Eggs I prefer regenerative farm pasture-raised
    • 1/2 ea Organic Bell Pepper finely chopped
    • 1 ea Organic White Onion fInely chopped
    • 7 ea Organic Garlic Cloves minced
    • 1 handful Organic Celery Leaves finely chopped
    • 1 tsp Organic Fresh Rosemary finely chopped
    • 1 tsp Organic Fresh Thyme finely chopped
    • 1 tsp Organic Garlic Powder
    • 1 tsp Sea Salt can substitute himalayan salt
    • 1 tsp Paprika
    • 1 tbsp Organic Dijon Mustard
    • 1 tsp Organic Pickle Juice
    • 1 tbsp Grass-fed Beef Tallow can substitute avocado oil
    • 1 pkg Organic Burger Buns

    Instructions

    • Prepare the Burger Mixture:
      In a large bowl, combine the ground beef, eggs, bell pepper, onion, garlic, celery leaves, rosemary, thyme, garlic powder, paprika, salt, pepper, Dijon mustard, and pickle juice. Mix everything together until well combined. Be careful not to overwork the meat to keep it juicy.
      3 lbs Organic Grass-Fed Beef, 2 ea Organic Eggs, 1/2 ea Organic Bell Pepper, 1 ea Organic White Onion, 7 ea Organic Garlic Cloves, 1 handful Organic Celery Leaves, 1 tsp Organic Fresh Rosemary, 1 tsp Organic Fresh Thyme, 1 tsp Organic Garlic Powder, 1 tsp Sea Salt, 1 tsp Paprika, 1 tbsp Organic Dijon Mustard, 1 tsp Organic Pickle Juice
    • Form the Burger Balls:
      Divide the meat mixture into small balls, about 2 to 3 inches in diameter (this makes for nice thick burgers). Set them aside.
    • Smash the Patties:
      Heat a skillet or griddle over medium-high heat. Once hot, add a small amount of tallow to coat the pan. Place each ball of meat onto the skillet, then smash it down quickly with a burger press or the bottom of a plate until it’s about 1/4 inch thick. The key is to smash them quickly so they sear well!
      1 tbsp Grass-fed Beef Tallow
    • Cook the Patties:
      Cook the patties for about 2–3 minutes per side, or until a crispy crust forms and the center reaches your desired doneness. Be sure to flip only once!
    • Toast the Buns:
      While the burgers are cooking, toast your buns in the skillet or oven until lightly golden. This adds a nice crunch to your burger

    • Melt the Cheese:
      During the final minute of cooking, add your cheese on top of the patties and cover the skillet to melt the cheese.
    • Assemble Your Smash Burger:
      Place the cooked patties on the toasted buns and add your favorite toppings, such as lettuce, tomato, pickles, onions, and sauces like ketchup or mustard.

    Burger Sauce: 
    • 3 tbsp mayo 
    • 2 tbsp dijon mustard
    • 1 tbsp bbq sauce 
    • Thyme 
    • Garlic
    • Honey 
    • Salt, pepper, cayenne
     
    🍯 Holistic Tip:
    For a balanced meal, add a side of sweet potato fries or a fresh salad. These burgers are juicy and full of flavor, so they don’t need a lot of extra condiments. Enjoy!
