Ingredients

Guacamole

  • 1/4 organic white onion chopped
  • 1/4 organic red onion chopped
  • 3 large organic avocados
  • handful of organic cilantro chopped
  • 2 organic limes juiced
  • 2 organic jalapeños chopped
  • 4 large organic garlic cloves minced
  • 2 tsp organic Himalayan salt
  • 1 tbsp fresh ground organic black pepper
  • 1 tbsp your favorite organic taco blend seasoning
  • 1 tbsp organic garlic powder
  • 1 tsp organic cayenne pepper seasoning

Sautéed Veggies

  • 1 organic bell pepper
  • 1 organic white onion
  • 1 tbsp high quality organic avocado oil

Steak

  • 1.5 lbs grass-fed skirt steak
  • 1 tbsp organic Himalayan salt
  • 1 tbsp organic fresh ground black pepper
  • 1 tbsp organic garlic powder
  • 1 tbsp your favorite organic taco seasoning blend
  • 1 organic lime juiced

Toppings

  • 2 organic limes
  • handful of organic cilantro chopped
  • 4 tbsp organic white onion small diced
  • 4 tbsp organic shredded mozzarella

Instructions

Make the Guacamole

  • Chop red and white onions into small cubes and add into a medium sized bowl.
  • Slice 3 large avocados in half, remove the pit, and squeeze into bowl.
  • Add your cilantro, lime, jalapeño, garlic, and seasoning into the bowl.

Sauté your Veggies

  • Add avocado oil to a saucepan on medium-low heat.
  • Julianne your onion and bell pepper.
  • Sauté the onion and bell pepper until the onion is almost translucent.
  • Set Aside.

Cooking the Steak

  • Heat a cast iron pan on medium-low heat.
  • Add a tbsp of avocado oil.
  • Pat dry your skirt steak.
  • Season your steak on one side.
  • Place the steak seasoning side down in the pan and sear, flipping after 2-3 minutes.
  • Remove and immediately season the other side of your steak.
  • Let your steak rest for 6 minutes before cutting into it.

Heat your Tortillas

  • Add 1 tbsp of avocado oil to a small saucepan on low heat.
  • Add your tortilla, flipping after 1 minute.
  • Remove your tortilla and set it aside.
  • Repeat this process with all of your tortillas.

Assemble

  • Add mozzarella cheese to our corn tortillas.
  • Add sautéed veggies on top of the cheese.
  • Then add your sliced steak on top of the sautéed veggies.
  • Add a dollop of guac onto the steak.
  • Sprinkle on cilantro and white onion.
  • Juice your lime onto the tacos.
  • Enjoy!
