Instructions
Preheat the oven to 350°F (175°C).
Place the stick of butter into a 9x13-inch baking dish and set it in the oven to melt as the oven preheats.
In a saucepan, combine the sliced peaches, sugar, lemon juice, cinnamon, nutmeg, and vanilla. Cook over medium heat until the peaches soften and the mixture reduces slightly, about 5–8 minutes.
In a mixing bowl, whisk together flour, brown sugar, granulated sugar, baking powder, salt, cinnamon, milk, heavy cream, and vanilla extract until a thick batter forms.
Carefully remove the dish with the melted butter from the oven.
Pour the batter evenly over the melted butter—do not stir.
Spoon the peach mixture evenly on top of the batter—again, do not stir.
Bake at 350°F for 40 minutes, or until the top is golden brown and bubbly.
Let cool for at least 10 minutes before serving. Enjoy warm with whipped cream or ice cream!
